The new school year is officially in full swing, and for us, that means we’re a lot busier than we were during the summer. Back to school means back to schedules, packed lunches, homework, and after-school activities.
In an effort to help the night time routine a little easier, I’ve decided to start a series of posts called “Dinner Dash.” Here you will find a collection of dinner recipes that you can make in a dash, and will hopefully enjoy together around the dinner table discussing the events of the day. Or maybe you just need a quick dinner after a bunch of activities and don’t feel like feeding your family from a drive through window. Either way, I hope these recipes help to make your life a little easier.
Since the goal is to get dinner on the table quickly, for this recipe, I use store bought meatballs, and store bought marinara sauce. My son LOVES any type of food that includes marinara sauce. He will request Italian food multiple times a week, and this meatball sub recipe happens to be one of his favorites.
Here’s what you’ll need for the Meatball Subs:
Shredded Mozzarella Cheese
French Bread Rolls
Garlic (minced or powdered – whatever you have on hand)
Preheat oven to 375 degrees
Open french bread rolls and place on baking pan
Spread each half of french bread roll with butter and garlic
Place rolls in oven until lightly toasted
While the rolls are toasting, heat the meatballs in the microwave as directed on the package
Cut meatballs in half
Remove the rolls from the oven
Place meatballs cut side down on one-half of each roll
Pour marinara sauce over meatballs and on the half of the roll that doesn’t have meatballs
Sprinkle with mozzarella cheese
Cut provolone slice in half and place on top of meatball side
Bake in oven until cheese melts
Remove from oven, close sandwich halves, let cool a bit, and enjoy!
*I like to serve the meatball subs with a side of caesar salad and a few potato chips.
